Ingredients:
2 medium sweet potatoes, peeled and cubed
1 lb ground turkey sausage (or seasoned ground turkey)
1 small onion, chopped
1 red bell pepper, diced
1 green bell pepper, diced
2 cups fresh spinach, chopped
8 large eggs
1/4 cup milk (optional, for a fluffier texture)
1 tsp garlic powder
1 tsp smoked paprika
Salt and pepper to taste
Olive oil or cooking spray
Instructions:
1. Prepare the Sweet Potatoes:
Preheat your oven to 400°F (200°C).
Toss the cubed sweet potatoes with a drizzle of olive oil, salt, and pepper. Spread them evenly on a baking sheet.
Roast for about 20 minutes until tender and slightly crispy.
2. Cook the Sausage and Vegetables:
In a large skillet, cook the turkey sausage over medium heat until fully browned. Break it into crumbles as it cooks.
Add the chopped onion, bell peppers, and spinach. Sauté until the vegetables are tender and the spinach is wilted.
3. Combine the Ingredients:
Lower the oven temperature to 375°F (190°C).
In a large bowl, whisk the eggs, milk, garlic powder, smoked paprika, salt, and pepper.
In a greased 9×13 inch baking dish, layer the roasted sweet potatoes, sausage mixture, and then pour the egg mixture over the top.
4. Bake:
Bake for 25-30 minutes until the eggs are set and the top is golden.

Allow it to cool slightly before slicing. Serve warm and enjoy!
