Ingredients:
For the Donuts:
2 cups all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
1 teaspoon salt
2 teaspoons pumpkin spice (or a mix of cinnamon, nutmeg, ginger, and cloves)
1 cup pumpkin puree
2 large eggs
1/4 cup vegetable oil
1/4 cup milk
1 teaspoon vanilla extract
For the Pumpkin Spice Sugar Coating:
1/2 cup granulated sugar
1 teaspoon pumpkin spice
Instructions:
1. Prepare the Donut Batter:
Preheat your oven to 350°F (175°C). Grease a donut pan.
In a large bowl, mix flour, sugar, baking powder, salt, and pumpkin spice.
In another bowl, whisk together the pumpkin puree, eggs, vegetable oil, milk, and vanilla extract.
Combine the wet ingredients with the dry ingredients and mix until just combined (don’t overmix).
2. Bake the Donuts:
Spoon the batter into the greased donut pan, filling each cavity about 3/4 full.
Bake for 12-15 minutes, or until a toothpick inserted into a donut comes out clean.
Let the donuts cool for about 5 minutes before transferring them to a wire rack.
3. Coat the Donuts:
In a bowl, mix the granulated sugar and pumpkin spice.
While the donuts are still warm, dip each one into the sugar mixture, ensuring an even coating.
Tips:
If you don’t have a donut pan, you can use a muffin pan and make donut holes.
For an extra touch, drizzle some vanilla glaze on top!
