Green Tea Pesto Pasta
Ingredients:
200g pasta (spaghetti or fusilli)
1 cup fresh basil leaves
½ cup spinach
2 tsp green tea (powdered or steeped from tea bags)
¼ cup roasted cashews or pine nuts
2 tbsp olive oil
1 tbsp lemon juice
2 garlic cloves
¼ cup Parmesan cheese (optional)
Salt and black pepper to taste
Instructions:
1. Cook the pasta according to package instructions, then drain and set aside.
2. Steep green tea in 2 tbsp of hot water for 5 minutes, then strain.
3. In a blender or food processor, combine basil, spinach, green tea, roasted cashews, garlic, lemon juice, olive oil, and Parmesan cheese. Blend until smooth.
4. Season with salt and black pepper to taste.
5. Toss the cooked pasta with the green tea pesto and cook on low heat for 1-2 minutes.
6. Serve warm with extra Parmesan on top if desired.
This unique twist on pesto pasta adds an umami depth from the green tea, making it both flavorful and nutritious!
