Ingredients:
2 cups (250g) all-purpose flour
1 cup (200g) granulated sugar
1 teaspoon baking powder
¼ teaspoon salt
2 large eggs
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 teaspoon almond extract
1 tablespoon lemon zest
¾ cup (90g) sliced almonds
Instructions:
1. Preheat the Oven:
Set your oven to 325°F (163°C).
Line a baking sheet with parchment paper.
2. Mix Dry Ingredients:
In a bowl, whisk together flour, sugar, baking powder, and salt.
3. Prepare Wet Ingredients:
In another bowl, beat eggs, then mix in melted butter, vanilla extract, almond extract, and lemon zest.
4. Combine & Knead:
Gradually add the wet mixture into the dry ingredients.
Stir until it forms a dough.
Fold in the sliced almonds.
5. Shape & First Bake:
Divide dough into two logs (about 10 inches long and 2 inches wide).
Place them on the baking sheet and bake for 25–30 minutes, until firm and lightly golden.
6. Cool & Slice:
Let logs cool for 10 minutes, then slice them diagonally into ¾-inch pieces.
7. Second Bake:
Arrange slices cut-side down on the baking sheet.
Bake for 10–12 minutes per side, until crisp and golden brown.
8. Cool & Serve:
Let biscotti cool completely before storing.
