Chocolate Peanut Butter and Jelly Cupcakes
Ingredients:
For the Cupcakes:
1 cup all-purpose flour
½ cup unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup buttermilk
For the Filling & Frosting:
½ cup peanut butter
½ cup your favorite jelly or jam
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Instructions:
1. Prepare the Cupcakes:
Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
In another bowl, beat the butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla extract.
Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Mix until smooth.
Divide the batter among the cupcake liners, filling each about two-thirds full.
Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let them cool completely.
2. Fill the Cupcakes:
Once the cupcakes are cool, use a knife or cupcake corer to remove a small section from the center of each.
Fill each hole with a teaspoon of peanut butter and a teaspoon of jelly.
3. Make the Frosting:
Whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Pipe or spread the whipped cream over the cupcakes.
4. Serve & Enjoy:
Optionally, drizzle with extra peanut butter or sprinkle crushed peanuts on top.
