Fluffy Vegan Pancakes

Ingredients:

1 cup all-purpose flour

2 tablespoons sugar (or sweetener of choice)

2 teaspoons baking powder

1/8 teaspoon salt

1 cup non-dairy milk (such as almond, soy, or oat milk)

2 tablespoons vegetable oil or melted coconut oil

1 teaspoon vanilla extract

Instructions:

1. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.

2. Combine Wet Ingredients: In a separate bowl, mix the non-dairy milk, oil, and vanilla extract.

3. Prepare the Batter: Slowly pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay.

4. Cook the Pancakes: Heat a non-stick pan or griddle over medium heat and lightly grease it with oil. Pour ¼ cup of batter onto the pan for each pancake.

5. Flip When Bubbles Form: Cook until bubbles appear on the surface and the edges look set (about 2-3 minutes). Flip and cook for another 1-2 minutes until golden brown.

6. Serve Warm: Enjoy your pancakes with maple syrup, fresh fruits, or your favorite toppings.
