1 cup cooked quinoa or brown rice

1/2 cup fresh spinach leaves

1/2 cup asparagus, trimmed and cut into 2-inch pieces

1/4 cup green peas (fresh or frozen)

1/4 cup cucumber, diced

1/4 avocado, sliced

1 tablespoon pumpkin seeds or sunflower seeds

1 tablespoon olive oil

1 teaspoon lemon juice

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder (optional)

Dressing:

2 tablespoons tahini

1 tablespoon lemon juice

1 teaspoon maple syrup or honey

1/2 teaspoon salt

1-2 tablespoons water (to adjust consistency)

Instructions:

1. Steam the Vegetables: Lightly steam the asparagus and green peas for about 3-4 minutes until they are tender but still bright green.

2. Prepare the Dressing: In a small bowl, mix tahini, lemon juice, maple syrup/honey, salt, and water. Stir well until smooth.

3. Assemble the Bowl: Start with a base of cooked quinoa or brown rice. Arrange spinach, asparagus, green peas, cucumber, and avocado on top.

4. Add Crunch: Sprinkle with pumpkin or sunflower seeds.

5. Drizzle the Dressing: Pour the prepared tahini dressing over the bowl.
