Coffee-Crusted Pork Tenderloin

Ingredients:

1 pork tenderloin (about 1 lb)

2 tbsp ground coffee

1 tbsp brown sugar

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp ground black pepper

1/2 tsp salt

1 tbsp olive oil

Instructions:

1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.

2. Prepare the rub: In a small bowl, mix the ground coffee, brown sugar, smoked paprika, garlic powder, black pepper, and salt.

3. Coat the pork: Pat the pork tenderloin dry with paper towels. Rub olive oil all over, then press the coffee mixture onto the surface, coating it evenly.

4. Sear the pork (optional but recommended): Heat a large oven-safe skillet over medium-high heat. Sear the pork for about 2 minutes per side until a crust forms.

5. Roast in the oven: Transfer the pork to the prepared baking sheet (or leave it in the skillet if oven-safe). Roast for 20–25 minutes, or until the internal temperature reaches 145°F (63°C) for a slightly pink center.

6. Rest and slice: Let the pork rest for 5–10 minutes before slicing. This helps keep it juicy.

7. Serve: Slice into medallions and enjoy with roasted vegetables, mashed potatoes, or a fresh salad.
