Ingredients

For the Cake:

2 ½ cups (310g) all-purpose flour

2 ½ tsp baking powder

½ tsp salt

1 cup (226g) unsalted butter, softened

2 cups (400g) granulated sugar

4 large eggs

1 tbsp vanilla extract

1 cup (240ml) whole milk

For the Buttercream Frosting:

1 ½ cups (340g) unsalted butter, softened

4 cups (480g) powdered sugar

2 tsp vanilla extract

3-4 tbsp heavy cream or milk

Pink food coloring (for inner ears and nose)

For Decoration:

Shredded coconut (for fur texture)

Mini marshmallows (for tail)

Black licorice or melted chocolate (for whiskers)

Pink jelly beans or candy (for nose)

Large chocolate chips or black fondant (for eyes)

Instructions

Step 1: Bake the Cake

1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

3. In a large bowl, cream butter and sugar until light and fluffy (about 3-4 minutes).

4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.

5. Alternately add dry ingredients and milk to the batter, starting and ending with the dry ingredients. Mix until just combined.

6. Divide batter evenly between prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

7. Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Step 2: Prepare the Bunny Shape

1. Place one cake layer in the center of a serving tray (this will be the bunny’s face).

2. Cut the second cake layer into three pieces: two ears and a bowtie. To do this:

Cut a crescent shape from each side, forming two long ear shapes.

The remaining center piece will be the bowtie.

Step 3: Frost the Cake

1. In a large bowl, beat the butter until creamy. Gradually add powdered sugar and beat until fluffy.

2. Mix in vanilla extract and heavy cream, adjusting the consistency as needed.

3. Spread a thin crumb coat of frosting over the entire cake and chill for 15 minutes.

4. Apply a final layer of frosting, smoothing it over the face, ears, and bowtie.

Step 4: Decorate the Bunny

1. Sprinkle shredded coconut over the frosting to create a fur-like texture.

2. Use pink-colored frosting to pipe the inner ears and bowtie details.

3. Place chocolate chips or fondant circles for eyes, a pink candy for the nose, and black licorice or melted chocolate for whiskers.

4. Attach a small cluster of mini marshmallows at the back to form a fluffy bunny tail.

Step 5: Serve and Enjoy!

Let the cake set for 10-15 minutes, then slice and enjoy!

This upgraded bunny cake is soft, moist, and visually stunning—perfect for any special occasion.
