These roasted carrots are caramelized to perfection with a tangy-sweet balsamic glaze. They make a delicious side dish for any meal!

Ingredients:

1 lb (450g) carrots, peeled and cut into even pieces

2 tbsp olive oil

2 tbsp balsamic vinegar

1 tbsp honey (or maple syrup for a vegan option)

1 tsp Dijon mustard (optional, for extra depth)

½ tsp garlic powder

½ tsp salt

¼ tsp black pepper

½ tsp dried thyme (or 1 tsp fresh thyme leaves)

1 tbsp chopped fresh parsley (for garnish)

Instructions:

1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Prepare the glaze: In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, garlic powder, salt, pepper, and thyme.

3. Coat the carrots: Place the carrots on the baking sheet and pour the balsamic mixture over them. Toss well to coat evenly.

4. Roast: Spread the carrots out in a single layer. Roast for 25-30 minutes, stirring halfway through, until they are tender and caramelized.

5. Serve: Remove from the oven and garnish with fresh parsley. Serve warm and enjoy!

Tips for the Best Roasted Carrots:

Use baby carrots for a quicker prep.

Roast at 425°F (220°C) for a deeper caramelization.

Add a sprinkle of red pepper flakes for a slight kick.
