Instructions
1. Prepare the Chickpea Fritters:
1. Mash the chickpeas in a bowl until mostly smooth but slightly chunky.
2. Add flour, egg, minced garlic, cumin, paprika, salt, pepper, and chopped parsley. Mix well.
3. If the batter is too dry, add a little water (1 tablespoon at a time) until it holds together.
4. Heat olive oil in a pan over medium heat.
5. Scoop small portions of batter, flatten into fritters, and fry for 2-3 minutes per side until golden brown.
6. Transfer to a plate and set aside.
2. Cook the Chicken:
1. Cut the chicken breasts into thin slices or small pieces.
2. Mix cumin, paprika, garlic powder, salt, and black pepper in a small bowl.
3. Rub the seasoning onto the chicken pieces.
4. Heat olive oil in a pan over medium-high heat.
5. Cook the chicken for 4-5 minutes per side (or until fully cooked).
6. Remove from heat and let it rest for a minute.
3. Make the Yogurt Sauce:
1. In a small bowl, mix yogurt, lemon juice, grated garlic, salt, and chopped herbs.
2. Stir well until smooth.
4. Assemble & Serve:
1. Arrange the chickpea fritters and chicken on a plate.
2. Serve with mixed greens or a simple salad.
3. Drizzle the yogurt sauce over everything or serve it on the side.
4. Squeeze fresh lemon juice on top for extra flavor.
Tips:
You can make the fritters crispier by baking them at 400°F (200°C) for 15-20 minutes instead of frying.
Add a pinch of chili flakes for some heat.
Serve with pita bread or rice for a complete meal.
