Garlic Shrimp and Quinoa Recipe

Ingredients:
1 cup quinoa
2 cups water or vegetable broth
1/2 teaspoon salt (for quinoa)
1 tablespoon olive oil
1 pound (450g) shrimp, peeled and deveined
4 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
1/2 teaspoon paprika
Salt and black pepper to taste
2 tablespoons butter
1 tablespoon lemon juice
1/4 cup fresh parsley, chopped
1/2 teaspoon lemon zest (optional)
Instructions:
1. Cook the Quinoa:
Rinse the quinoa under cold water.
In a pot, bring 2 cups of water or broth to a boil. Add quinoa and salt.
Reduce heat, cover, and simmer for about 15 minutes, or until the quinoa absorbs the liquid.
Fluff with a fork and set aside.
2. Cook the Shrimp:
Heat olive oil in a large skillet over medium heat.
Add shrimp, season with paprika, salt, and black pepper.
Cook for 1-2 minutes on each side until pink and opaque. Remove shrimp and set aside.
3. Prepare the Garlic Butter Sauce:
In the same skillet, melt butter over low heat.
Add garlic and red pepper flakes, sauté for 1 minute until fragrant.
Stir in lemon juice and zest.
4. Combine Everything:
Add the cooked quinoa and shrimp back to the skillet.
Toss everything together for a minute to blend the flavors.
Garnish with fresh parsley.
5. Serve and Enjoy:
Serve warm with extra lemon slices on the side.
