Beef and Veggie Frittata Recipe

Ingredients:

6 large eggs

½ cup milk

1 cup cooked ground beef

1 small onion, chopped

1 bell pepper, chopped

½ cup spinach or kale, chopped

½ cup cherry tomatoes, halved

½ cup shredded cheese (cheddar, mozzarella, or your choice)

1 tablespoon olive oil

½ teaspoon salt

¼ teaspoon black pepper

½ teaspoon garlic powder

½ teaspoon paprika (optional)

Instructions:

1. Preheat the oven to 375°F (190°C).

2. Prepare the egg mixture: In a bowl, whisk eggs, milk, salt, black pepper, garlic powder, and paprika. Set aside.

3. Cook the beef and veggies:

Heat olive oil in an oven-safe skillet over medium heat.

Add chopped onions and bell peppers, sauté for 2-3 minutes until soft.

Add ground beef and cook until browned (if not already cooked). Drain excess fat if needed.

Stir in spinach or kale and cook for another minute.

4. Assemble the frittata:

Pour the egg mixture over the beef and veggies in the skillet.

Add cherry tomatoes on top and sprinkle with shredded cheese.

5. Cook on stovetop: Let it cook on low heat for about 2 minutes until the edges start to set.

6. Bake in the oven: Transfer the skillet to the preheated oven and bake for 12-15 minutes until the center is set and the top is golden brown.

7. Cool and serve: Let it rest for a few minutes before slicing. Serve warm.
