Mediterranean Tuna Kebabs
Ingredients:
1 pound fresh tuna, cut into 1-inch cubes
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 red onion, cut into wedges
1 zucchini, sliced into thick rounds
2 tablespoons olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
Skewers (soak in water if wooden)
Instructions:
1. Prepare the Marinade: In a bowl, mix olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
2. Marinate the Tuna: Add the tuna cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
3. Assemble the Kebabs: Thread the marinated tuna, bell peppers, onion wedges, and zucchini onto the skewers, alternating the ingredients.
4. Grill the Kebabs: Preheat the grill to medium-high heat. Grill the kebabs for about 2-3 minutes per side, or until the tuna is cooked through but still tender.
