Ingredients
For the Peanut Butter Cookies:
1 cup peanut butter (creamy or crunchy)
½ cup granulated sugar
½ cup brown sugar
1 egg
1 teaspoon vanilla extract
½ teaspoon baking soda
¼ teaspoon salt
For the Grape Jelly Ice Cream:
2 cups heavy cream
1 cup whole milk
½ cup granulated sugar
1 teaspoon vanilla extract
½ cup grape jelly
Instructions
Make the Cookies:
1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a bowl, mix peanut butter, granulated sugar, brown sugar, egg, and vanilla until well combined.
3. Add baking soda and salt, then mix until smooth.
4. Roll dough into small balls and place on the baking sheet. Flatten slightly with a fork in a crisscross pattern.
5. Bake for 8-10 minutes or until edges are golden. Let cool completely.
Make the Ice Cream:
1. In a bowl, whisk together heavy cream, milk, sugar, and vanilla until sugar dissolves.
2. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
3. When almost done churning, add grape jelly and swirl it in. Freeze until firm.
Assemble:
1. Scoop grape jelly ice cream onto a peanut butter cookie.
2. Place another cookie on top to make a sandwich.
3. Serve immediately or freeze for later.
