Homemade Santa Fe Spinach Dip
Ingredients:
1 (10 oz) package frozen chopped spinach, thawed and drained
1 (8 oz) package cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cumin
1/4 teaspoon paprika
1/4 teaspoon black pepper
1/4 teaspoon salt
1/2 cup diced tomatoes (optional)
1/4 cup diced jalapeños (adjust to taste)
1/4 cup grated Parmesan cheese (for topping)
Instructions:
1. Preheat Oven: Set your oven to 375°F (190°C).
2. Prepare Spinach: Squeeze out excess water from the thawed spinach.
3. Mix Ingredients: In a large bowl, combine cream cheese, sour cream, and mayonnaise. Mix until smooth.
4. Add Cheese & Seasonings: Stir in Monterey Jack, cheddar cheese, garlic powder, onion powder, cumin, paprika, black pepper, and salt.
5. Add Vegetables: Mix in the drained spinach, diced tomatoes, and jalapeños.
6. Transfer to Baking Dish: Spread the mixture evenly into a greased baking dish.
7. Top with Parmesan: Sprinkle grated Parmesan cheese on top.
8. Bake: Place in the preheated oven and bake for 20–25 minutes, or until the dip is hot and bubbly.
9. Serve: Remove from the oven and let it cool slightly. Serve with tortilla chips or warm pita bread.
