Tomato Soup with Hummus Crispbreads

This rich, velvety tomato soup is packed with deep flavors from roasted tomatoes, garlic, and herbs. Paired with crunchy crispbreads topped with creamy hummus, it makes a wholesome, comforting meal that’s easy to prepare.

Ingredients

For the Tomato Soup:

1 kg ripe tomatoes, halved

1 medium onion, chopped

3 cloves garlic, unpeeled

1 tbsp olive oil

1 tsp dried oregano (or fresh if available)

½ tsp smoked paprika

1 tbsp tomato paste

500 ml vegetable broth (or water)

1 tsp sugar (optional, to balance acidity)

Salt and black pepper, to taste

1 tbsp balsamic vinegar (optional, for depth)

A handful of fresh basil leaves (for garnish)

A drizzle of extra virgin olive oil (for serving)

For the Hummus Crispbreads:

4 whole-grain crispbreads (or any crunchy flatbread)

200 g hummus (store-bought or homemade)

1 tbsp lemon juice

½ tsp cumin powder

1 tbsp olive oil

A pinch of chili flakes (optional)

Fresh parsley or microgreens for garnish

Instructions

Step 1: Roast the Tomatoes

1. Preheat your oven to 200°C (400°F).

2. Place the halved tomatoes, chopped onion, and unpeeled garlic cloves on a baking tray.

3. Drizzle with olive oil and sprinkle oregano, smoked paprika, salt, and pepper. Toss well to coat everything evenly.

4. Roast for about 25–30 minutes, or until the tomatoes are soft and slightly caramelized.

Step 2: Blend the Soup

1. Once roasted, squeeze the garlic cloves out of their skins and transfer everything into a blender.

2. Add the tomato paste, vegetable broth, and sugar (if using). Blend until smooth.

3. Pour the soup into a pot and simmer on low heat for 5–10 minutes. Stir in the balsamic vinegar and adjust seasoning if needed.

Step 3: Prepare the Hummus Crispbreads

1. In a small bowl, mix the hummus with lemon juice, cumin powder, and olive oil to enhance the flavor.

2. Spread a generous layer of hummus over each crispbread.

3. Sprinkle with chili flakes and garnish with fresh parsley or microgreens.

Step 4: Serve and Enjoy

1. Ladle the warm soup into bowls, drizzle with extra virgin olive oil, and top with fresh basil.

2. Serve with hummus crispbreads on the side for dipping.
