Very tasty Mexican cauliflower fried rice which is very delicious to eat and we can make it very easily at home.
Ingredients:-
1.2 fresh small cauliflowers, about 4 cups rice.
2.1 green chilli finely chopped.
3.Olive oil 1 teaspoon.
4.1 onion finely chopped.
5.Take 2 large cloves minced garlic.
6.Salt to taste
7.Lemon juice 1 teaspoon
8.Garlic granules 1/4 teaspoon
9.Roasted cumin powder 1 tsp
10.Red chilli powder 1 teaspoon
11.Chopped tomatoes 2 cups
12.2 tbsp chopped fresh coriander
(optional toppings: avocado, red tomato, shredded cheese)
Method:-
1.Cut cauliflower into large pieces and put them in a food processor, process for 5-6 seconds until it becomes rice-like and breaks down.
2.Heat olive oil in a pan over medium flame, add onion, green chillies and garlic and fry until onion becomes soft.
3.Add cauliflower rice, salt, tomatoes, cover and cook for 4-5 minutes until soft.
4.Add cumin seeds + red chili powder + garlic + lemon juice.
5.Cook until the cauliflower is soft but not mushy. Garnish with chopped coriander before serving. Cauliflower fried rice is ready.
