Ingredients:
For the base:
200g digestive biscuits (or graham crackers)
100g melted butter
For the filling:
600g cream cheese
200g caster sugar
2 tsp vanilla extract
3 large eggs
200ml sour cream
Instructions:
1. Prepare the base: Crush the biscuits and mix them with melted butter. Press the mixture into a springform pan and chill for 30 minutes.
2. Make the filling: Beat the cream cheese and sugar until smooth. Add the vanilla and eggs one at a time, mixing well. Stir in the sour cream.
3. Bake: Pour the filling over the crust and bake at 160°C (320°F) for 50 minutes. Turn off the oven and leave the cheesecake inside for 1 hour.
4. Chill: Refrigerate for at least 4 hours before serving.
2. No-Bake Chocolate Cheesecake

300g dark chocolate (melted)
500g cream cheese
100g icing sugar
200ml double cream
Instructions:
1. Mix crushed Oreos with melted butter and press into a pan. Chill for 30 minutes.
2. Beat cream cheese and sugar until smooth. Mix in melted chocolate.
3. Whip double cream until thick and fold into the chocolate mixture.
4. Pour over the base and chill for at least 4 hours.
3. Mango Cheesecake
A tropical cheesecake with a fresh mango topping.
Ingredients:

80g melted butter
For the filling:
400g cream cheese
150g sugar
200ml heavy cream
2 ripe mangoes (pureed)
2 tsp gelatin (dissolved in warm water)
Instructions:
1. Make the base by mixing crushed biscuits with butter and pressing into a pan. Chill.
2. Beat cream cheese and sugar. Add mango puree and dissolved gelatin.
3. Whip cream and fold it in. Pour over the base and chill overnight.
