1 cup cornstarch
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika (optional for color)

For the Sauce:
4 tablespoons unsalted butter
4 cloves garlic, minced
2 tablespoons Cajun seasoning (adjust to taste)
1 tablespoon sugar (optional for balance)
1 tablespoon fish sauce (for umami)
1 teaspoon chili powder (adjust to spice preference)
Juice of 1 lime
Garnish:
Fresh coriander leaves, chopped

Instructions:
1. Prepare the Prawns:
In a bowl, mix cornstarch, salt, pepper, and paprika.
Coat the prawns in this mixture, shaking off any excess.
2. Fry the Prawns:
Heat oil in a deep pan. Once hot, fry the prawns until golden and crispy.
Drain on paper towels to remove excess oil.
3. Make the Sauce:
In a separate pan, melt the butter over medium heat.
Add minced garlic and sauté until fragrant.
Stir in Cajun seasoning, sugar, fish sauce, and chili powder.
Cook for 1-2 minutes until the sauce is well combined.
Squeeze in lime juice and mix well.
4. Combine and Serve:
Toss the fried prawns in the sauce until they are fully coated.
Garnish with chopped coriander and serve with lime wedges.
Tips:
Adjust the spice level to your liking by adding more or less chili powder.
Serve with steamed jasmine rice or crusty bread to soak up the flavorful sauce.
